La Cristallina è uno specialty coffee con un’acidità vibrante e una tazza realmente cristallina, tostato fresco.

The Grupo de la Asociacion Palestina was established in 2015 in the southern part of the Huila region, department of Palestine.
The idea was born from a family initiative to improve the quality of life of the coffee growers in this area. The Group includes eight members and 50 humble families of coffee growers. Together they grow coffee on 200 hectares of land. During the harvest season, about 70 workers are hired to make the best selection of the ripe coffees. Most of these growers came from families of coffee growers and inherited their farms from their family line. And some also received it as part of the government-coffee restitution program, which aims to preserve the tradition of coffee in the region.
Here they mainly grow the classic varieties, such as Colombia, Caturra and Castillo. We can also see that some growers are open to experimenting and introducing so-called exotic varieties such as Tabi, Pink Borbon or Gesha. Likewise, the group continues the traditional washing process; they also innovate and manage prolonged, anaerobic fermentations, and natural processing of coffee.
They fight for modernization and innovation, to reduce the use of water. The farmer’s interest in natural processing has been achieved through continuous education on the importance of proper use of water and its use. La Cristallina coffee owes its name is that it has a crystalline and sparkling cup despite being naturally processed coffee.
